Some dynamite cookie recipes from visitors to the site!

Hannah from Hunter's CHOCOLATE QUAKES
3 TBSP. unsalted butter, melted
1/2 c. sugar
1 large egg
1/2 tsp. vanilla
3 TBSP. cocoa, pref. Dutch process
1/2 c. flour
1/2 tsp. baking powder
1/8 tsp. salt
1/4 c. semisweet choc. chips
confectioner's sugar

1. In a medium bowl, using an electric mixer, beat the butter, sugar, egg and vanilla on low speed until pale yellow in color and thickened, about 1 minute. Sift the cocoa, flour, baking powder and salt into the bowl, and mix on low speed until incorporated. Fold in choc. chips.
2. Cover, and chill until dough is firm enough to handle, about 1 hour.
3. Heat oven to 350 degrees. Line a baking sheet with parchment paper or foil. Place confectioners' sugar in a medium bowl.
4. Form the chilled dough into 1-inch balls. Place in confectioners' sugar, and roll to coat completely. Place on a baking sheet, leaving about 1 1/2 inches between each cookie. Bake 10 - 12 minutes, until the cookies are puffed and the sugared surfaces have cracked apart. The centers will appear underdone. Remove from the oven and let sit for 5 minutes, then transfer to a wire rack to cool completely.
This makes a small batch, about 2 dozen. I suggest doubling the recipe.

Cousin Tony's Favorite Lemon Cookies
1 C butter
1 C sugar
2 Eggs
3 C sifter flour
1 tsp soda
1 6oz can lemonade thaw
extra sugar

Cream butter and sugar, add eggs, beat until light and fluffy.
Sift flour and soda, add dash salt to creamed mixture with 1/C lemonade concentrate
Drop by tsp onto ungreased cookie sheet
Bake at 400 for about 8 minutes
Brush with remaining lemonade and sprinkle with sugar while still warm and on cookie sheet
Makes about 4 doz
